This is a super easy salad I love to make. Take a couple ripe avocados, some Persian cucumbers and heirloom tomatoes. Chop to desired bites (I like to leave the tomatoes whole, but you can easily half them). Mix everything in a bowl with some light vinaigrette and you're good to go. Also great as a base for a more elaborate salad - add chicken, dried cherries, sliced almonds, whatever is on hand. So quick, easy and healthy!
